The “right” method is rarely “the one preservation method I happen to know.” It’s the method that fits the crop’s chemistry (pH, water content, sugar level), the available equipment, and the eating-pattern goal (do I want this as a side dish, a base for soups, a snack, an ingredient).
Anti-pattern
Trying to do everything by one method. Pressure-canning everything wastes the lacto-fermentable [[cabbage|cabbage]]. Lacto-fermenting everything wastes the [[dehydrator|dehydrator]]-perfect herbs. Dehydrating everything case-hardens the high-water-content fruit. Match crop to method.
What this recipe does NOT solve
- Fresh greens in winter — preservation is for the storage crops; cold-frame, greenhouse, or sprouts cover fresh greens.
- Citrus and tropicals — outside the temperate-zone scope; frozen citrus juice is the practical option.
- Coffee, tea, salt, oil, sugar — these are import-dependent in most temperate climates; preservation doesn’t replace them.
