Lacto-fermentation

Fermentation by lactic acid bacteria — Lactobacillus, Leuconostoc, Pediococcus, and related species — that consume sugars and produce lactic acid as their primary metabolite. The most-common form of food fermentation worldwide and the simplest to do at home. Salt, the right temperature, and time are typically the only requirements. Underlies sauerkraut, kimchi, traditional pickles, yogurt, kefir, sourdough, miso, fish sauce, and dozens of other staples across global cuisines. The microbes are everywhere already; lacto-fermentation is the practice of giving them the right conditions to do their work.

How it works

[[lactic-acid|Lactic acid]] bacteria are everywhere — on plant surfaces, in soil, in the air, on our hands. Given the right conditions (anaerobic, mildly salty, room or cool temperature), they outcompete spoilage organisms and consume the substrate’s sugars, producing lactic acid that further inhibits competing microbes.

The salt does two jobs: it draws water out of the food (creating brine), and it selectively favors [[lactic-acid|lactic acid]] bacteria over many spoilage organisms. Most lacto-fermentations work at salt concentrations of 1.5–3% by weight.

The acid does another two jobs: it preserves the food (most pathogens can’t survive below pH ~4.5), and it produces the characteristic tangy flavor.

Home-scale practice

The minimum kit: a clean jar, salt, the substrate, something to keep solids submerged (a smaller jar, a [[cabbage|cabbage]] leaf, a fermentation weight), and time. Most lacto-ferments are ready in days to weeks at room temperature; they continue to develop in flavor and complexity if held cooler longer.

Visual and sensory cues are the primary monitoring: bubbles indicate active fermentation; clear brine going slightly cloudy is normal; vegetables should remain submerged; surface scum (kahm yeast) is harmless and skimmable; mold is not — discard.
