Root cellaring

The traditional practice of storing root vegetables, fruits, cabbages, and other harvest in a cool, humid, dark space — typically a partially-buried structure, an unheated basement room, or a hole in the ground — that maintains 32–40°F and 80–95% humidity through the winter months. The pre-refrigeration form of long-term food storage; still effective and energy-free in cold-temperate climates.
