Drying and dehydration

The oldest food-preservation practice on Earth — removing water from food to prevent microbial growth. Practiced in every climate where sunlight or fire is available. Sun-dried tomatoes, jerky, dried fruit, dried beans, dried mushrooms, dried herbs, dried fish, dried grain, dried squash, dried apples — every cuisine carries dried-food traditions. Modern home-scale dehydrators and dehydrator-conversion ovens make the practice accessible year-round in any climate. Properly dried foods keep for months to years at room temperature, transport with negligible weight, and rehydrate into ingredients that retain most of the original food's nutritional density.

How drying preserves food

Microorganisms — bacteria, yeasts, molds — require water to grow. Reducing water content below ~20% (and water activity, aw, below ~0.7) inhibits microbial growth across most spoilage organisms. The food becomes shelf-stable at room temperature.

Dried foods don’t typically kill microbes (some can survive in dormant form); they prevent growth. When water returns (rehydration), some microbial activity can resume, so dried foods are typically rehydrated and used promptly.

Methods

  • Test for dryness — squeeze; if no moisture comes out and the piece doesn’t feel cool, it’s dry
  • Condition — store dried food in a glass jar for 1–2 weeks, shaking daily, to equalize moisture across pieces. If condensation appears, return to drying.
  • Store — airtight glass jars, dark place, cool temperature. Vacuum-sealed or oxygen-absorbed bags extend shelf life further.
