Fermentation
The transformation of food and drink by microbial action — bacteria, yeasts, and molds working on substrates from milk to grain to vegetables to fruit. The oldest food-preservation and food-transformation practice on Earth, predating agriculture by tens of thousands of years. Every traditional cuisine carries fermented foods at its core: bread, cheese, yogurt, beer, wine, miso, kimchi, sauerkraut, soy sauce, vinegar, fish sauce, kombucha, sourdough, tempeh, natto. Fermentation preserves food without refrigeration, multiplies nutritional value, generates beneficial microbes, and is one of the most-accessible home-scale abundance practices in any culture.
What fermentation is
Fermentation is biological transformation.
