A citrus hybrid (citron × bitter orange) originating in northeast India / northern Myanmar / China. Carried west through Persian and Arab agriculture, reaching the Mediterranean by ~1000 CE. The most-used acid-flavor agent in world cuisine; foundational to Mediterranean cooking, classical and modern bartending, and almost every European-derived dessert tradition. The juice's high citric acid and vitamin C content have long made it medically and culinarily important.

Citrus × limon is a hybrid of Citrus medica (citron) and Citrus × aurantium (bitter orange). The fruit’s distinctive acidity comes from a high citric-acid content (~5–6% of juice volume).
Cultural and historical
The lemon traveled west from its Asian origins through Persian agriculture into the Arab world, then to North Africa and Spain by the 10th century. Crusaders encountered citrus in Levantine gardens and brought specimens back to medieval Europe. By the early modern period the lemon was essential to Italian and Spanish cuisine, to British naval health practice, and (later) to industrial-scale beverage flavoring.
