Concept

Vegetarian

Also known as: vegetarianism, lacto-ovo vegetarian, lacto-vegetarian, ovo-vegetarian

An eating pattern that excludes meat, poultry, and fish but typically permits dairy, eggs, or both. The oldest continuously-practiced major dietary tradition with explicit ethics — rooted in dharmic traditions (especially Jainism and large parts of Hinduism), in early Pythagorean schools in the Mediterranean, in many Christian monastic orders, in Seventh-day Adventists, in much of Buddhism. Modern Western vegetarianism organized in the 19th century (Vegetarian Society, UK, 1847) and split off vegan eating in 1944. The vault carries vegetarianism as an aligned dietary pattern alongside vegan, pasture-based-omnivory, and others; vegetarian operators are kin and listed.

Forms

The umbrella covers several long-standing patterns:

 • Lacto-ovo vegetarian — no meat/poultry/fish; dairy and eggs included. The default in much of the modern West.
 • Lacto vegetarian — dairy yes, eggs no. The default in much of India.
 • Ovo vegetarian — eggs yes, dairy no. Less common as a named tradition.
 • Pescatarian — vegetarian + fish/shellfish. Widely practiced; debated whether it counts as vegetarian.
 • Pollotarian / flexitarian — mostly vegetarian with occasional poultry or other meat. Closer to “plant-forward omnivore” than to vegetarian proper.

The boundaries are often soft in practice and stricter in formal definition.

Religious and cultural roots

Vegetarianism is one of the oldest organized eating ethics on Earth.

 • Jainism — perhaps the most thorough vegetarian tradition; ahimsa extended to avoid even root vegetables for monks/nuns
 • Hinduism — large vegetarian populations, especially among Brahmin communities and in Vaishnavite traditions; vegetarian eating tied to ritual purity and ahimsa
 • Buddhism — vegetarian practice strong in Mahayana traditions (especially Chinese, Korean, Vietnamese monasticism); Theravada generally permits meat under conditions; Tibetan Buddhism historically less vegetarian due to climate
 • Sikhism — langar (the free communal kitchen) is vegetarian by protocol so all guests of any faith can eat together
 • Pythagoreans (~500 BCE) — early Mediterranean vegetarian school; ethical and metaphysical reasoning
 • Seventh-day Adventists — modern Christian vegetarian tradition; concentrated in Loma Linda, California — one of the blue-zones
 • Trappist and other monastic Christians — historical vegetarian or near-vegetarian practice
 • Jewish dietary thought — early rabbinic readings of Eden as vegetarian; substantial Jewish vegetarian movement in the 20th century

Vegetarianism is not a Western lifestyle invention. It is a millennia-old practice now globally spread.

Modern Western vegetarianism

The UK Vegetarian Society formed in 1847; sister organizations in the U.S. and across Europe followed. The 19th-century Western vegetarian movement combined health reform (Sylvester Graham, John Harvey Kellogg), animal-welfare ethics, and religious motivation. Vegetarianism remained a small but persistent minority practice through the 20th century, expanding sharply from the 1960s counterculture onward.

The 1944 split that named vegan eating was internal to this Western tradition.

Nutritional considerations

Lacto-ovo vegetarian diets are nutritionally robust across the lifespan when reasonably planned. Dairy and eggs supply B12, complete protein, and several other nutrients that vegan diets must source elsewhere. Iron and zinc warrant attention (lower bioavailability from plant sources); pairing legumes/whole grains with vitamin-C foods improves iron uptake.

Lacto vegetarian patterns common in India have sustained massive populations across many generations; the long-term safety question is empirically settled at the population level.

What the vault does with vegetarian operators

Same as vegan: listed by tier and bioregion in the directory, with the vegetarian designation noted in the entry. Many of the bioregion’s plant-forward restaurants and cafes are de facto near-vegetarian even when not labeled as such.

Lenses still to grow

 • Pescatarian as a contested boundary case
 • Cultural variation in what “vegetarian” includes (eggs, ghee, paneer, honey, fish stock, gelatin)
 • Vegetarian children, pregnancy, elderly nutrition
