Hugelkultur
Also known as: Hugel mound, Hugelbeet
A German/Austrian gardening practice meaning 'mound culture' — building a raised bed by burying logs and woody debris under soil, then planting on top. As the wood decomposes over years to decades, it: holds moisture like a sponge, releases nutrients slowly, supports soil-fungal networks, and gradually builds rich soil. Practiced for centuries in Central Europe; popularized internationally by Sepp Holzer's Krameterhof farm in Austria and through permaculture networks since the 1990s.
How to build
Build from the bottom up:
- Trench (optional) — dig 1-2 ft deep where the mound will go
- Logs — large logs at the base; partly-rotted wood is best
- Branches and woody debris — fill gaps; smaller wood
- Twigs, leaves, straw — fill remaining gaps
- Compost or manure — if available, layer in
- Topsoil — cover everything with at least 6-12 inches of soil
- Plant — vegetables, perennials, fruit shrubs
Total height: typically 3-6 feet at construction; mounds settle over years as wood decomposes.

- Builds soil — over a decade, the mound transforms into deep rich soil
- Creates microclimate — south-facing mound slope warms early; north slope stays cool; different microclimates on the same mound
Variations
- Small backyard hugel — 3-4 feet tall, 6-10 feet long; one-person buildable
- Hugel berms / swale-hugels — combined with swales for added water retention
- Sepp Holzer hugels — large 6-7 ft mounds at Krameterhof; integrated with terraces and ponds
- Sheet-mulched hugel — hugel topped with sheet-mulch / lasagna gardening layers
- Sunken hugel — buried wood with planting at ground level rather than mounded; works in some climates
Considerations
- Year 1 — mound is nitrogen-deficient as decomposers consume nitrogen; plant heavy-feeders sparingly the first year, or add nitrogen
