Ash Cooking

Also known as: wood-ash leaching, lye cooking, ash-cake bread

A family of traditional food-preparation techniques that use wood ash — most often from hardwood — for its alkaline (potassium-and-calcium-hydroxide) chemistry. Applications range from corn nixtamalization (ash as cal substitute), to acorn leaching, to lye-soaking olives, to lefse-and-flatbread cooking on ashes, to lye-soaking vegetables for summer-roll wraps. Ash is one of the oldest human chemical inputs to food; before commercial slaked lime, sodium hydroxide, or refined sodium bicarbonate, wood ash provided alkalinity for nutrition, preservation, and texture.

Wood ash is alkaline because wood biomass is rich in potassium (K), calcium (Ca), and magnesium (Mg) — minerals that plants accumulate from soil and that remain after combustion as oxides and hydroxides. The major alkaline component is potassium carbonate (potash, K₂CO₃), which dissolves in water to give a strongly basic solution (pH 11–13).

Hardwood ash (oak, [[hickory|hickory]], beech, maple) is generally higher in potash than softwood ash (pine, fir, spruce) and is preferred for traditional alkali applications. Ash from fast-grown trees on rich soils gives stronger alkali than ash from slow-grown trees on poor soils; traditional practitioners sometimes specified specific tree species and origins.

The risk is alkali-burn — strong lye is genuinely caustic. Traditional practice was careful with skin and eyes; modern practitioners using strong wood-ash lye need similar care.

Ash cooking shows up across nearly every human food tradition that uses wood fire:
